We have a case of the Lazies..





I know Jack is as excited as I am for Winter to be over already! Its too cold to play outside for more then 15 minutes and we hardly ever get out of our PJ's. It certainly is fun to be lazy for a few weeks but after a few months we are starting to get Cabin Fever! Here is a list of things we look forward to doing once it gets warmer:
Going on a picnic
Walking to the park to go on the swings
Walking to the library for Storytime (I think Jack is finally old enough)
Go to California
Go to the Zoo
Swim in my kiddie pool
Play ball outside with Chloe
Sidewalk Chalk!!
Bubbles!!
Wagon rides

Healthy Recipe

Healthy Carrot Muffins
(My new Favorite Recipe)

Ingredients:
3/4 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup brown sugar
2 Tablespoons ground flax seed (can be omitted if you don't have it)
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
2 large eggs
1/3 cup applesauce
1 Tablespoon vanilla extract
4 medium carrots finely grated (about 2 cups).. I just put them in the food processor..
1/2 cup canned crushed pineapple (slightly drained)
1/2 - 3/4 cup chopped walnuts (optional)

Directions:
Preheat oven to 350. Grease 12-18 muffin cups or line with paper liners.

Whisk the flours, brown sugar, flax seed, cinnamon, baking powder, baking soda and salt together. In separate bowl whisk the eggs and combine with applesauce and vanilla extract.

Fold the wet and dry ingredients together. Stir in carrots, pineapple and walnuts until evenly moist. Divide the batter among the muffin cups. Bake 25-30 minutes or until a toothpick inserted in the centers comes out clean. Turn muffins onto cooling rack, store in an airtight container.
